How to bake your pies

Ingredients

  • 2 cups flour or gluten-free flour
  • 1/2 cup unsweetened cocoa powder
  • 1-1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 stick unsalted butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 tsp pure vanilla extract
  • 1 cup whole milk

Peanut butter filling

  • 1 stick unsalted butter
  • 3/4 cup creamy peanut butter
  • 3/4 cup sugar
  • 3/4 tsp pure vanilla extract
  • 1/2 tsp fine sea salt

Instruction

You will want to start by mixing flour, cocoa, baking soda, baking powder, and salt together. Then grab your stand mixer with the paddle adjustment and mix together the butter on medium until soft and creamy. Add both sugars and beat until they are evenly blended. Add the egg and beat for 2 minutes. Then add in the vanilla. This is when you'll want to slowly add the dry ingredients with the milk. Mix only until the dry ingredients are evenly blended and look battery and you've got a nice silky batter. Using a spring-loaded 2 tbsp cookie scoop is best to use, place a rounded scoop in each of the whoopie molds {I for one didn't know this existed until recently so this would help a lot to make the cookie part flat and even} You will want to put down parchment paper if you don't have the pan. You will then bake for 8 to 10 minutes, or until the cakes are nice and puffy. lightly press in the center and a toothpick comes out clean.
