Ingredients

  • 1 cup butter
  • 2 cups of sugar
  • 4 large eggs
  • 3½ cups of glutenfree flour
  • 2 teaspoons vanilla extract
  • 1 tablespoon and 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum
  • 1 teaspoon salt
  • 1½ cups milk

Instructions

So you will want to preheat the oven to 350°, then spray 2 cake pans for this makes two layers. Then with the stand mixture, mix butter, and the sugar till they make a nice creamy look, next you will want to mix in the eggs one at a time and the vanilla slowly. After that, you'll want to set it aside and mix your flour, baking powder, baking soda, xanthan gum, and salt into a separate bowl. Now you will want to slowly mix half of the milk and have of your mixture into the stand mixture then add the rest of the milk and mix into it and let it mix together until it is a battery consistency. Then seperate the batter evenly into the two cake pans.

Now, you'll put them into the oven for about 35 minutes. After they are taken out you will need to let them cool in there pans then take em out to cool on cooling racks. Once they are completely cooled down you will be able to frost them, for if you frosted them while they were still warm, the icing could've melted. Now we will talk about the icing.

Ingredients

  • 1/2 cup of butter
  • 2/3 cup of cocoa {unsweetened}
  • 3 cups of powdered sugar
  • 1/3 cup of milk
  • 1 tsp of vanilla extract

Now you will want to melt the butter and add it all into the bowl until it is the right consistency. It's really that easy.
